Jane's Tomato Crumble
|
To make
the most out of local fragrant basil and exquisite summer
tomatoes while they're still with us, try this casserole.
Goes well with almost anything: simple grilled fish, burgers,
or a rustic ham or roast beef sandwich.

Ingredients:
- 2-3 lbs fresh
tomatoes, chopped
- 1/2 c chopped
fresh basil
- 1 tsp. chopped
garlic
- 3/4 cup grated
parmesan cheese
- 3/4 cup bread
crumbs
- 1/2 c pine
nuts (optional)
- 6 TB butter,
chopped
Directions:
- Coat 2-3
qt casserole dish with olive oil.
- Mix tomatoes,
basil and garlic and spread in dish.
- For crumble,
mix together cheese and bread crumbs, then add
butter.
- Mix with
hands until crumbly. Spread on top of tomatoes.
- Bake at 350
degrees until top is brown, about 45 minutes
