Friend Jane's Tomato Crumble
To make the most out of local fragrant basil and exquisite summer tomatoes while they're still with us, try this casserole. Goes well with almost anything: simple grilled fish, burgers, or a rustic ham or roast beef sandwich.

TOMATO CRUMBLE

Ingredients:

  • 2-3 lbs fresh tomatoes, chopped
  • 1/2 c chopped fresh basil
  • 1 tsp. chopped garlic
  • 3/4 cup grated parmesan cheese
  • 3/4 cup bread crumbs
  • 1/2 c pine nuts (optional)
  • 6 TB butter, chopped

Directions:

  • Coat 2-3 qt casserole dish with olive oil.
  • Mix tomatoes, basil and garlic and spread in dish.
  • For crumble, mix together cheese and bread crumbs, then add butter.
  • Mix with hands until crumbly. Spread on top of tomatoes.
  • Bake at 350 degrees until top is brown, about 45 minutes
